How Long to Brine a Turkey for Smoking?


"You should brine a turkey in preparation for smoking for at least 8 hours but 24 to 48 hours is recommended as it helps to tenderize and penetrate the skin of the turkey more thoroughly and also forking the turkey all over before putting it in the brine helps"

Here's a Great Brine for Smoking a Turkey

1 Cup Kosher Salt
1 Cup Molasses
1 Cup Brown Sugar
3 TBS Cinnamon
3 TBS Ground Cloves
1 Large Onion Chopped

Brine Instructions: Pour cold water over Turkey just until it is completely covered. Take the turkey out of the water and mix in the ingredients into the cold water to make the brine. Then poke the turkey with a fork all over and put the turkey in the brine and let set for 24 to 48 hours. Then proceed to Smokey the turkey.

How long should I smoke a Turkey for and what temperature?

1 Prepare an 8 to 18 lb. thawed or fresh turkey by removing the giblets and neck draining the juices, and drying with paper towels. The turkey should be completely thawed for even, safe cooking.


Do not stuff your turkey. Brush the skin with olive oil and insert an oven-safe meat thermometer deep into lower thigh.

Set the smoker to 225° F. Place the turkey on a cooking rack and cook for 8 to 12 hours or until the inner thigh temperature reaches 180° F.

Check the temperature of your turkey after 3½ hours. Your turkey must pass through a critical range of 40° F to 140° F in 4 hours or less. If the internal temperature is low after 3½ hours, take your turkey out of the smoker and finish it in the oven.

Cover the turkey and chill or let stand for 20 minutes before carving.

Pit Masters Recommendation Wood Type for Smoking a Turkey


My preference is Cherry wood for smoking Turkey but Maple and Alder work good too. Cherry gives a nice subtle sweet flavor that works AMAZING for Turkey!
